There’s something about fall that makes you want to slow down, get cozy, and spend a little more time in the kitchen.
Whether it’s wrapping your hands around a warm drink, pulling on your favourite sweater, or enjoying the smell of something baking in the oven, it’s often the little things that make this time of year so special.
As the days get cooler and the leaves begin to change, I find myself drawn to the simple comforts that make home feel extra inviting. And really, is there anything better than a fresh batch of cinnamon rolls on a crisp fall morning?
A Fall Favourite Worth Baking
This season, I wanted to share a recipe that feels like fall in every bite: Apple Cinnamon Rolls with Brown Butter Maple Icing from Half Baked Harvest.
Think soft, fluffy cinnamon rolls filled with sweet apples and warm cinnamon, finished with a rich, buttery maple icing. They’re the kind of treat that makes a chilly morning feel a little more special, whether you’re enjoying one with your morning coffee or sharing a plate with family on a lazy weekend.
The combination of apples, cinnamon, and maple is such a classic for this time of year, and the homemade dough makes these rolls feel like a little extra something special.
Fair warning: your kitchen is going to smell amazing!
Making Time for the Little Things
One of my favourite things about fall is how naturally it invites us to slow down. We spend a little more time indoors, pull out our favourite cozy blankets, and find ourselves appreciating those everyday moments that can get lost in the busyness of summer.
Baking is one of those simple pleasures. There’s something satisfying about taking a few ingredients, making something from scratch, and enjoying the results while they’re still warm from the oven.
These apple cinnamon rolls are perfect for a weekend baking project, a family breakfast, or simply an excuse to make an ordinary morning feel a little more special.
And if you’re planning ahead, the recipe includes make-ahead instructions, so you can do some of the prep the night before and enjoy freshly baked rolls the next morning.
Apple Cinnamon Rolls with Brown Butter Maple Icing
Makes: Approximately 12 rolls
Prep time: 30 minutes
Cook time: 25–30 minutes
Total time: Approximately 2 hours and 30 minutes, including rising time
Ingredients
For the dough
1 cup warm milk
2¼ teaspoons active dry yeast
1 tablespoon brown sugar
4 tablespoons salted butter, at room temperature
3 large eggs
3½–4 cups all-purpose flour
½ teaspoon kosher salt
For the apple filling
½ cup brown sugar
¼ cup granulated sugar
1 tablespoon cinnamon
6 tablespoons salted butter, at room temperature
2 Honeycrisp apples, chopped
For the brown butter maple icing
4 tablespoons salted butter
6 ounces cream cheese, at room temperature
¼ cup maple syrup
2–3 cups powdered sugar
2 teaspoons vanilla extract
A pinch of salt
Instructions
1. Prepare the dough.
Combine the warm milk, yeast, and brown sugar in a mixing bowl. Let the mixture sit for 5–10 minutes until foamy. Add the butter, eggs, flour, and salt, mixing until a smooth dough forms. Start with 3½ cups of flour and add more as needed if the dough is sticky.
Cover and let the dough rise at room temperature for about an hour, or until doubled in size.
2. Make the apple filling.
Mix the brown sugar, granulated sugar, and cinnamon in a small bowl. Grease a 9 × 13-inch baking dish with butter.
3. Assemble the rolls.
Roll the dough out on a lightly floured surface into a rectangle approximately 12 × 18 inches. Spread the softened butter over the dough, then sprinkle evenly with the cinnamon-sugar mixture and chopped apples.
Roll the dough into a log, seal the edge, and cut into 12–15 rolls. Arrange them in the prepared baking dish, cover, and let rise for another 20–30 minutes.
4. Bake until golden.
Preheat the oven to 350°F (175°C). Bake the rolls for 25–30 minutes, or until golden brown and cooked through.
5. Make the icing.
Melt the butter in a saucepan over medium heat and cook for 2–3 minutes, until lightly browned and fragrant. Remove from the heat.
In a bowl, combine the cream cheese, maple syrup, powdered sugar, vanilla, and a pinch of salt. Whisk in the browned butter until smooth.
6. Finish and enjoy.
Spread the icing over the warm rolls and serve fresh from the oven. Grab your favourite mug, pour yourself something warm, and enjoy!
Recipe note: For overnight preparation, assemble the rolls through step 3, cover, and refrigerate without the second rise. The following morning, let them sit at room temperature for 30 minutes before baking as directed.
A Cozy Season at Home
Fall always reminds me that home is about more than the space itself. It’s the little routines, the familiar smells, the time spent together, and the moments that make everyday life feel special.
Whether you’re trying a new recipe, enjoying a quiet morning, or gathering around the table with the people you love, I hope you find a few opportunities to slow down and enjoy the season.
If you give these apple cinnamon rolls a try, I hope you love them as much as I think you will!
Happy fall, everyone! 💙
